When I’m looking to be extra clean and lean, this has my go-to dinner that leaves me feeling satiated, nourished and light. There has been so much talk of protein being the silver bullet and though it may have its place, we are virtually forgetting that the true fountain of youth are alkaline, fresh vegetables that will combat inflammation, support digestion and elimination and keep our cells and blood healthy. When we cook them in the proper way, they can also be the most leaning. Increasing our whole fruit and vegetables is what will keep us young and thriving. So here is the simplest recipe of all that truly comes together in a few minutes. The trick is using little oil and more water to help cook the veggies. The water will help steam the veggies without needing too much oil. You could serve with something simple like basmati rice, quinoa or sprouted toast or buckwheat toast with ghee or grass-fed butter.
