Veggie Udon and Rice Cake Soup

My kids are like me, no matter how hot it is outside, noodle soup is always on the menu. This is the most simplified version that my kids both love which is ja fest in and of itself. You can fancy it up with any chili oil or extras but sometimes simple is what I crave too. The broth is very mellow, just like the kids like it. I source the noodles from Hmart, I choose organic udon noodles (the frozen variety tend to have a lot of additives or gums). The rice cakes are also from HMart, which you can find frozen, just make sure the only ingredients are rice and salt. Feel free to add your fave veggies in as you please!
