Rustic Ratatouille
A taste of Provence where the last summer week finds you β€οΈπ«π·
Itβs the end of summer and around us all the summer produce is bursting with abundance. This dish is perfect to put all that zucchini, tomatoes and eggplant to use and makes the perfect summer side. Itβs an extremely forgiving recipe, and almost impossible to mess up. I like giving the veggies a rustic chop (unlike the precise Disney movie version, which is just as comforting). I prefer letting the ratatouille sit after baking to let all the sugars settle and the ratatouille gets that much sweeter and flavorful. Enjoy as if having a late lunch in Provence!
