Recipes of the Week: Addictive Cabbage, Gochujang Cauliflower Rice
Cabbage is such an underrated superfood. It truly acts as a broom to sweep your digestive system and renew/balance your gut. So you can imagine my joy and when I discovered this recipe. It’s. So. Good
It’s been a busy two weeks (hence the late substack), I had two mid-week work trips in a row, recording podcast episodes, planning the menu for a retreat abroad and tons of activities for the kids, and though “busy is good!” packed schedules are hard on my nervous system and the way that I create peace is taking the time to make nourishing and grounding meals for myself when I can. This can simply mean making my daily green juice, or revamping a bowl of packaged noodles with extra veggies. I do find the small things add up so even if it’s imperfect, leaning into home cooked meals when I can is better than nothing. I also make sure I’m moving a lot and getting in my daily workout or steps as much as I can to stop from feeling stagnant in my body.
Between work trips and projects, I somehow made two of my favorite recipes that I’ve cooked in a while! I’ve been wanting to make the addictive cabbage for months, and it definitely lived up to its hype, a gave it a slight spin but it’s truly perfect and one of those dishes that are truly cleansing and delicious. I’m going to be keeping this in the fridge from now on for an alkaline snack or pre-dinner from now on. The gochujang cauli rice is also a remix on a childhood fave and if you’re been wondering what to do with gochujang here’s your answer! I find when you have one transitional recipe to try out a new ingredient you feel empowered to start incorporating it more into your kitchen repertoire.
