This recipe is a riff off of one of my favorite pizzas from Double Zero that since has gone downhill sadly after switching owners so I had no other choice than to recreate my own. And as it often happens, now I like mine better. I usually use a brown rice tortilla here but any will do as long as it’s large enough to house all the veg. Think personal pizza sized, not quite Siete tortilla sized if that makes sense. I love the creamy base and of course a pile of arugula or sprouts on top make it perfectly Bonberi approved. The key is slicing your potatoes oh-so-thin so they are papery, I find the only way to accomplish that is with a mandolin but if you are verrrry precise you can use a knife. We just don’t want slabs of potato here, they melt in your mouth when they’re much more delicate.
