I’ve been loving these lazy healthy girl dinners that are easy, quick and leave me feeling lean and energized. The secret is extra greens, extra veg. Then you can perk it up with fun things like cauliflower gnocchi! For a long time I was suspicious of cauliflower gnocchi but once I got a hang of it, it’s such a great backup when you don’t have time to grocery shop. The sauce is my creamy vodka hack I’ve been doing for years— 2 parts your fave marinara (Raos for me), 1 part unsweetened almond or oat milk, couple spoons of nutritional yeast. And you have the perfect luscious creamy sauce!
