This is one of my favorite salad dressings that I can have a few times a week. It’s creamy, tangy and the perfect amount of earthiness. It’s a riff off of that ubiquitous green salad dressing from the beloved hometown Japanese restaurants many of us grew up with. You know that grainy but also smooth orange dressing that clings to iceberg and cucumber and is oh so refreshing. And no, it’s not carrot ginger! That’s right. Turns out lots of our fave hometown Japanese restaurant dressings are neither carrot nor ginger based. It’s one of the simplest dressings that comes together in a blender within minutes. I love to keep it in the fridge all week and I always make a quick batch whenever I have takeout sushi so I can have extra greens (who wants to pay for an extra measly takeout salad and there’s never enough dressing.)
