Of all the comforting foods, I actually think potatoes are one of the most cleansing vegetables since they are so satiating and hearty but leave the body relatively easy. So I am always game for a tater recipe! My favorite way to eat them is with a big salad before. This recipe is an homage to my favorite Greek side that comes bubbling to the table, perfectly soft and tart with crisp edges. I also have a version in my cookbook Body Harmony. The key is basting them halfway to keep them coated in that bright citrus sauce and I like to let them cool so they get super concentrated and flavorful. Enjoy!
