I’ve always said if I could have one cuisine everyday for the rest of my life, Greek would be a top contender. Everything is so fresh, bright and makes me feel better every time I have it. And spanikopota is one of my favorite dishes! The briney salty feta with the earthy dill and dark greens is something I’m always craving. This time, I wanted to give it a grain-free spin. What I’ve found when cooking classic dishes, it’s less the way something is cooked (aka wrapped in phyllo dough) than the actual flavors (here fresh dill and feta) that really makes a dish so impactful. To that end, this recipe only requires a few ingredients and is super easy clean up. I love that you can keep these in the fridge and pop them into the toaster oven for when you want a little hearty bite.
