Who wants to wait for summer when you can have the easiest quick blueberry crumble right now? This was one of my OG bonberi desserts when I first began the cleansing lifestyle. It’s so simple yet decadent. I prefer mine with a big scoop of goats milk ice cream but you can serve with coconut yogurt or oat whip!
1 pint blueberries
2 tbsp coconut sugar
1 tsp corn starch
Zest of 1/2 orange
Crumble:
2 cups almond flour
1/2 cup coconut sugar
1/2 cup ghee (soft but not melted)
Dash of sea salt
1/2 tsp ground cinnamon
Preheat oven to 350. Toss blueberries in coconut sugar, citrus zest, corn starch. Set aside. In a bowl, mix almond flour, coconut sugar, cinnamon, ghee, salt and form a crumbly mixture with your hands. Transfer berries to a heat safe baking dish. Top with crumble. Bake for 30 min or until browned on top and bubbly. Serve with favorite ice cream!
