I love this dish so much because it showcases how simple yet elevated a one ingredient meal can be. It’s one of the cleanest, cleansing dishes there is especially if you omit the cheese ;) but I find it adds a velvetiness that feels like you’re in Southern Italy. You could definitely sub regular zucchini here but I do find the golden varietal to be sweeter and less watery so it holds up as a pasta quite well. The key is sautéing the zucchini instead if boiling or steaming it to get maximum flavor and texture. You could easily make this vegan by either omitting the cheese or subbing with nutritional yeast.
