My dad would make a version of this dinner for me and my brother almost weekly when our parents were getting divorced. On his weekends, he would declare, “I’m making my world famous baked spaghetti!” Which now looking back was him romanticizing bachelor meals that he could make quick and easy while keeping us entertained. It worked :) As a kid I would always look forward to the dish and I can still taste the crisp edges and oozing mozzarella center. It’s pretty basic of a recipe, that’s the point right, but I’ve swapped in spaghetti squash and goat mozzarella to make it a gut-friendly win too. I think he would approve :)
